Exposé // Miso Dulce de Leche
If you're a fan of salted caramel and chocolate, this flavor is for you. The star of this cake is the filling. We bake sweetened condensed milk until it turns a dark golden brown dulce de leche with toasty caramel notes and a subtle tang. We then blend it with a mellow shiro miso that rounds out the sweetness with some subtle salt and umami.
Paired with this miso dulce de leche is our dark chocolate buttercream. 72% Guittard chocolate, a dash of cocoa powder, and some Hedge coffee. It's a silky chocolate ganache that you can eat by the spoonful.
