Exposé // Malted Vanilla + Roasted Peaches

Have you ever grilled a peach on the barbecue, until the sugars are caramelized, and then topped it with a scoop of vanilla ice cream?

It's a quintessential summer food for us and, as summer winds down, we wanted to share that experience with you. Introducing our limited flavor for August: Malted Vanilla + Roasted Peaches.

The big question when working with peaches, of course, is: yellow or white? White peaches are sweeter, more floral, and more subtle, which makes them great for snacking on solo. But when baking, yellow peaches bring the acidity we need so there's still some zip after we roast them. Plus, they have a stronger flavor (that "classic peach" flavor bookmarked in your mind) that helps them stand out among other flavors in a cake.

For this release, we roasted and caramelized yellow peaches in the oven and then blended them into a tasty filling. On top of that, we layered malted Tonga vanilla buttercream, which really has that ice cream taste. The malt adds decadence, which we love, but keep in mind that it means this flavor is not available gluten-free (sorry, gf friends!).
